This Apple Bircher Muesli is the perfect breakfast — prepared in minutes (with much of the prep work done and dusted the night before), full of fibre and protein to keep you satisfied, and offering a boost of potassium and phytonutrients. This recipe calls for Kanzi apples — a naturally cross-bred apple that is juicy, crunchy, delicious, and in-demand. Follow the recipe below:
Apple Bircher Muesli Recipe
Preparation time : 15 minutes + overnight refrigeration
Serves 4
Ingredients
3 cups natural rolled oats
1 cup milk
¾ cup orange juice
1 ½ cup water
¾ cup greek style yoghurt
2 tablespoons sultanas
½ teaspoon cinnamon
1 Kanzi apple
¼ cup chopped pecans, toasted
¼ cup skinned chopped hazelnuts, toasted
2 tablespoons honey
1 Kanzi apple, extra, to serve
Directions
- Place the oats in a large bowl and pour in the milk, orange juice, water and yoghurt.
- Add the sultanas and cinnamon and stir the mixture until fully combined. Cover and refrigerate overnight.
- After refrigerating overnight, stir through grated Kanzi apple, nuts and honey. Add a little extra milk or water if needed. Top with sliced extra apple.
Note – bircher will keep in the fridge for 2-3 days. The oats will absorb the liquid so add more milk or water if desired
