After being treated to some sugar free, gluten free and organic goodies from My Wholesome Kitchen founder Rachel Gorney, we had to ask this kitchen queen for a recipe. Naturally, we wouldn’t dare ask Rachel to spill the secrets of her snacks, but she was kind enough to offer us this healthy dinner recipe that will please the whole family. Next time you’re thinking of ordering Chinese takeaway, try out this nutritious and nourishing Chicken San Choy Bow and let your insides thank you.
Chicken San Choy Bow
Ingredients
- 2 tbsp. coconut oil
- 1 red onion, finely diced
- 3 shallots, finely sliced
- 1 zucchini, finely sliced
- Good handful of button mushrooms, finely chopped.
- 400g organic chicken mince (best quality mince you can get)
- 3 gloves of garlic, finely sliced
- 1 tbsp. grated ginger
- 2 tbsp. sesame oil
- 2 tbsp. tamari (gluten free soy sauce)
- Good handful of continental parsley, roughly chopped.
- Good handful of coriander, roughly chopped.
- Finely sliced chili (optional)
To Serve
- Iceberg lettuce cups (it needs hold the mince)
- Sweet chili sauce (organic if possible or one without preservatives)
- Shallots, finely sliced
- Coriander, roughly chopped
- Lemon Juice
- Toasted crushed peanuts
Method
- Melt oil over a medium heat using a large fry pan.
- Sautee the onions and shallots for 3-4 minutes until soften but not brown.
- Add garlic, ginger, chili, zucchini and mushrooms and cook for another 3 minutes.
- Then add the chicken mince. Using a wooden spoon while cooking try to break the mince up so it starts to crumble and cook evenly.
- Cook the mince on a medium heat for about 5 minutes.
- Then on a low heat for 10 minutes with a lid on. We want the mince to still remain juicy and not dry out.
- While cooking add the herbs, sesame oil, tamari and season to taste.
Tip: Make a large batch of this mince mixture and freeze it. You can also substitute the chicken with any other meat, e.g. beef or lamb.
To Serve
- Wash the iceberg lettuce cups.
- In the center of the lettuce squirt a little sweet chili sauce. Then add 2-heap tbsp. of the chicken mince.
- To garnish, add the shallot, coriander, extra chili and crushed peanuts.
- A good squeeze of lemon.
- Enjoy!!
