Fish with White Bean Tabouli Recipe
Cooking time: 8 minutes
Serves: 4
Ingredients:
2/3 cup couscous, uncooked
2/3 cup boiling water
2/3 bunch fresh coriander, finely chopped
1 bunch fresh parsley, finely chopped
240g tinned cannellini beans, rinsed & drained
2 tomatoes, diced
1 Lebanese cucumber, diced
25ml lemon juice
12.5ml extra virgin olive oil
Salt
Pepper
2 tsp butter
1 garlic clove, finely diced
480g white fish fillet of choice
Method:
1.Add the couscous to a small bowl and cover with the boiling water. Cover with cling wrap and allow the water to be absorbed. Then fluff with a fork.
2. Combine coriander, parsley, cannellini beans, tomatoes and cucumber.
3.Add the couscous to the salad when ready and dress everything with the lemon juice and olive oil and toss to combine. Season with salt and pepper.
4. Heat a frying pan over medium‐high heat and add the butter and diced garlic and sauté
for a minute or two. Add the fish fillet and cook for a few minutes each side until cooked
through.
5. Place salad on a serving plate and top with the fish
