Preparation time: 10 minutes
Cooking Time: 20 minutes
Serves: 2–4 (as a side dish)
Ingredients
250g (9oz) sweet potato
3 teaspoons extra light olive oil
½ teaspoon ground sweet paprika
¼ teaspoon ground cumin
Method
Preheat an oven to 200°C (400°F/Gas Mark 6). Peel and cut sweet potato into wedges. Blend oil, sweet paprika and ground cumin in a bowl. Add sweet potato and mix to coat wedges. Spray a baking tray with olive oil and place wedges, in one layer, on the tray. Bake for 20 minutes or until cooked, turning once during cooking.
