A big handful of fresh watercress leaves, washed
1 handful fresh mint leaves, washed
1 small avocado or half a large, deseeded and peeled
1 ruby grapefruit, peeled, segmented and roughly chopped, pips removed
60 g (2½ oz) firm organic tofu, crumbled
1 tablespoon pepita or pumpkin seeds
1 tablespoon sunflower seeds
1 tablespoon extra virgin olive oil
1 tablespoon apple cider vinegar
Big pinch salt and freshly ground pepper
