Herbal teas are not only blissful to drink but can also be a delicious addition to our everyday cooking. Herbal teas can enhance the flavour, aroma and taste of your simple ingredients and turn them into beautiful meals that delight the senses. Below are three of my favourite recipes and some enjoyable ways to incorporate herbal teas into your cooking.

Sleepy Time Lavender Shortbread
Organic Ingredients
For the cookies
– 1/4 cup coconut flour
– 1/2 cup arrowroot flour
– 1/4 teaspoon natural salt
– 1 teaspoon dried lavender flowers
– 100 g coconut oil
– 1 tablespoon raw honey or maple syrup
For the icing
– 2 tablespoon coconut oil
– 2 tablespoon coconut butter
– 1 teaspoon dried lavender flowers
– 1/4 teaspoon of green leaf stevia powder
Method
1. Mix the coconut flour, arrowroot flour, salt, and lavender in a medium bowl.
2. In a large bowl with a hand or stand mixer, cream together the oil and honey.
3. Add the dry ingredients to the shortening dough and mix until the pieces start to come together into a big ball.
4. Pour the mixture out onto a piece of plastic wrap and shape into a log shape. Wrap with the plastic wrap.
5. Refrigerate for at least 30 minutes or freeze for up to 3 months.
6. Preheat the oven to 300 F /150C.
7. Remove the log from the fridge, unwrap from plastic, and cut into 1/4 inch slices. Put the slices on a baking sheet covered in parchment paper.
8. Bake for 15 minutes or until they start turning golden brown.
9. Let sit for at least 10 minutes to cool before moving from sheet.
10. Meanwhile, melt the icing ingredients together in a small pan over medium heat. Stir to mix.
11. Using a spoon, pour the icing onto the short bread.
12. Alternatively, you can pat the dough out flat and use a cookie cutter to cut shapes out). Add a few minutes of cooking time if the cookies are super soft after 15 minutes.
Old Fashioned Mint Gummy Bears
Organic Ingredients
– 1/3 cup peppermint tea
– 3 tablespoons real gelatin powder
– 3 tablespoons raw honey
Method
1. Pour the liquid into a small saucepan and bring to a simmer, then add the gelatine and stir until dissolved.
2. Taste and sweeten with honey, if needed.
3. Pour into a stainless steel mould made for cookies or hard candy and put in the fridge to set. If you don’t have a small mould, pour the liquid into a dish or tin with a thickness of 1cm then simply cut into squares after the jelly has set.
4. Store in the fridge for up to 2 weeks.
Hibiscus flower and Cinnamon Poached fruit
Organic Ingredients.
Choose from
– pears, cut into quarters and cored
– apples, cut into quarters and cored
– quince, cored and sliced
– berries, whole
– cinnamon, nutmeg, clove, hibiscus flower
– ½ teaspoon vanilla bean powder
Method
1. Combine the fruit, water and aromatic spices in a saucepan and simmer until the fruit is just tender.
2. Cool and keep refrigerated for up to 4 days.
