You’ll never want to leave the house with this hearty, healthy and delicious recipe. It’s the perfect winter meal that will have you feeling warm and fuzzy in under 10 minutes. Founder of TIFFXO, Tiffany Hall, shares her miso pot noodle soup recipe.

Ingredients
1 sachet miso soup
30g rice noodles
100g firm tofu, cut in 2cm cubes
6 pods frozen edamame, defrosted & shelled
4 button mushrooms, sliced
1 carrot, spiralized or grated
25g spinach leaves
Method
1. Layer miso, noodles, tofu, edamame, mushrooms, carrot and spinach in a jar.
2. Pour over boiling water to top of jar, just under rim, cover and stand for 2-3 minutes. Stir to combine flavours and serve.
