Craving for a little afternoon pick-me-up and not wanting to indulge on treats that leave you feeling guilty? Look no further because health and lifestyle social media guru Krista Gawehn‘s pecan, flax and coconut cookies are healthy and delicious giving you that afternoon boost without the guilt.
Ingredients:
1 ½ cups pecans
¼ cup Fermentanicals Organic Sprouted Flax
¾ cup desiccated coconut
1 tsp ground cinnamon
¼ cup pure maple syrup
2 tsps melted organic coconut oil
1/3 cup or 1 medium mashed banana
Topping:
Pecan and flax crumb. Pulse ½ cup pecans until a crumb forms, add 1 tbsp. Fermentanicals Organic Sprouted flax and pulse to combine. Set aside.
Method:
1. Preheat oven to 160.C. Place the pecans in a food processor and process until a paste forms, approximately 2 minutes
2. Add the flax, desiccate coconut, mashed banana, cinnamon, coconut oil and maple syrup and process until well combined. Allow to stand for 5 minutes to firm
3. Line 2 baking trays with non-stick baking paper and roll tablespoonfuls of the mixture into balls, flatten slighting and gently press in pecan and flax crumbs
4. Cook for 25-30 minutes or until golden. Cool on a wire rack
