Protein Balls are the most versatile and delicious snacks to master. This delicious and light recipe by Belinda Norton-Smith, Health and Fitness Expert, is bound to keep you fuelled throughout the day and topped up ahead of workouts or the 3pm slump.
Ingredients
1 cup of raw cashews
1 cup of dried apricots
1 scoop of BodyScience White Chocolate protein
1 tablespoon of coconut oil
½ cup of almond meal
½ cup of shredded coconut
Method
1. Place in a blender > cashews, apricots, almond meal and protein
2. Blend it all up until oils in cashews are released and mixture is fine
3. Add coconut oil and shredded coconut
4. Blend again until evenly combined
5. Roll into balls and place in the fridge (options to roll into coconut again)
