Forget Tacos Tuesdays, we’re all about Tacos everyday when it comes to Tassal’s Salmon Tacos with this absolutely delicious avocado salsa. You can either share this with your friends and family, or simply enjoy it alone.
Time: 30 Minutes
300g Fresh Salmon Skin-Off
1Tbsp olive oil
4 mini tacos
2 avocados, cubed
1 red onion, finely chopped
Small handful of coriander, chopped
Avocado and Coriander Sauce
½ cup sour cream
1 ripe avocado, pitted and skinned
¼ cup cilantro, chopped
Juice of 1 lime
1 red chilli, seeded and chopped
Salt, to taste
Slices of red cabbage
1. Pre-heat oven to 180°C. Place salmon on a baking tray and drizzle with olive oil. Bake in the oven for 20–25 mins and flake into chunks.
2. To make the salsa combine avocado, red onion and coriander in a small bowl. Season as required.
3. To make the avocado and coriander sauce, place all ingredients in a food processor and blend until smooth and creamy.
4. Heat up tacos in the microwave for ten seconds. Top with salmon, avocado salsa, sauce and garnish with red cabbage and lime and enjoy!
