Spicy Thai Corn Soup Recipe

The colder months call for warming soups that nourish from the inside out. Traditionally, soup can take a bit of time to prepare and boil, but with this super quick, ten-minute recipe, you can whip up a deliciously fragrant soup and wave goodbye the stove.

This Spicy Thai Corn Soup is a balanced meal that will help keep you feeling full and satisfied. Containing healing herbs, a serving of vegetables and requiring only a blender and ten minutes of your time, this is such a simple and healthy meal to whip up after a long day. Like most good soups, this recipe will keep well in the fridge and can easily be frozen for a later occasion.

Spicy Thai Corn Soup

Serves 6

Ingredients

500ml vegetable stock
1 cup of fresh coriander, including roots
2cm piece of galangal
2cm cubed nub of ginger
3 kaffir lime leaves
2 large red chillies, seeds removed
400m lite coconut cream
800g creamed corn
2 tablespoons of fish sauce
juice of 1/2 lime

Method

1. Place stock, coriander, galangal, ginger, kaffir lime leaves and chillies into a blender. Blend for 1 minute or until smooth.

2. Add coconut cream, creamed corn, fish sauce and lime juice. Blend for another 30 seconds.

3. Serve soup warm with coriander to garnish.
