Ingredients
2 eggs
250g sweet potato, cut in 2 slices lengthways
½ avocado, mashed
50g feta, crumbled
Zataar
1 tbs sumac
½ tbs thyme
¼ tsp salt
1 tsp sesame seeds
Method
Place eggs in a saucepan of cold water, bring to boil and cook for 4-5 minutes. Refresh in cold water and peel once cool.
Combine the zaatar ingredients in a small bowl.
Place the sweet potato in a toaster and cook for 5 minutes or until tender.
Place sweet potato on a plate, top with avocado, feta, egg and zataar to serve.
