Never sure what to bring to a little afternoon gathering. A side of dip and some crackers can just be your answer. Plant Proof Founder, Simon Hill shares his delicious beetroot hummus and it is perfect for any occasion.
Servings: 2 people
2 medium Roasted Beetroot, skin removed
1 can Chickpeas
1/2 Lemon (juice)
3 Garlic Cloves
1 tbsp Tahini
1 tbsp Coconut Yogurt
Pink Salt & Pepper (to taste)
1. Combine all ingredients into a Kitchen Aid or other food processor and blend until desired consistency is reached. At halfway point, stop and scrape the ingredients down from the side of the work bowl and then continue.
