Blue Breakfast Bowl Recipe
Serves: 1
Ingredients
2 frozen bananas, chopped
½ – 1 cup (70-140g) frozen pineapple, chopped
1 tbsp almond butter
½-1 tsp blue spirulina
1 tsp mesquite powder (optional)
1 cup (240ml) coconut milk
½ cup (120ml) rice milk
Topping
1 fig, sliced
1 peach, sliced
½ plum, sliced
½ kiwi, sliced
1 tbsp blueberries
1 tbsp shredded coconut
1 tbsp almond butter
Method
1. Place frozen bananas, pineapple, almond butter, ½ tsp blue spirulina, mesquite powder, coconut and rice milk in your blender and whizz till smooth. Taste and check colour. If you like, add extra ½ tsp spirulina.
2. Pour into your bowl and top with fruit, coconut and almond butter.
3. Devour!
