INGREDIENTS
1 Soft Boiled Egg each – cooked then chilled for later
5g Dukkah
50g Fire Roasted Capsicum
20g Spanish Onion
15ml Balsamic Dressing
5ml Olive Oil
1 Flat Bread each
80g Hommus
20g Baby Spinach
15g Feta Cubes
2g Fresh Dill
METHOD
Lightly fry onion and capsicum in a greased fry pan until warmed through, then drizzle with balsamic dressing.
Place flat bread into oven set on 180 degrees for 2 minutes to warm, then transfer to serving plate.
Build on flat bread starting with an even spread of Hommus reaching the edges – followed by spinach, the warmed onion & capsicum mix, then crumbled feta on top.
Take chilled soft boiled egg out fridge, roll in dukkah mix and then slice in half-length ways.
Add egg halves onto flat bread with one facing upwards and other downwards.
Finish with fresh dill. Enjoy!
