Ingredients
3 tbs almond meal
30g chocolate protein powder
1 tbs chia seeds
2 tsp raw cacao powder
1/2tsp baking powder
1 large egg
1 egg white
1 tsp rice malt syrup
1-2 tbs almond milk
1 banana, sliced diagonally
1 tsp cacao nibs
Sauce
1/4cup Greek yoghurt
3 medjool dates
2 tsp raw cacao powder
Method
1. Combine almond meal, protein powder, chia seeds, cacao, baking powder, egg, egg white and rice malt syrup, adding sufficient milk to form a batter.
2. Heat a non-stick frypan over medium heat and add 2 tbs batter. Cook until bubbles appear on the surface, flip and cook for a further 1-2 minutes. Remove from pan, keep warm and repeat with remaining mixture.
3. Meanwhile, blend sauce ingredients together.
4. Layer pancakes with sliced banana and drizzle over sauce and cacao nibs.
