Makes: 6 muffins
Ingredients
1 cup baking mix
2 cups oats
1/2 cup brown sugar
2 teaspoons cinnamon
1 egg
1/4 cup oil (coconut, olive, or other – your choice!)
1/2 cup milk of your choice
1/2 cup Jellied Cranberry Sauce
Directions
1. Preheat oven to 190ºC. Grease a 6-cup muffin tin.
2. Combine baking mix, oats, brown sugar and cinnamon in a medium mixing bowl. Combine egg, oil and milk in a separate mixing bowl. Add to dry ingredients, mixing just until the dry ingredients are moist.
3. Fill each muffin cup 1/3 full with batter. Spoon about 1/2 tablespoon cranberry sauce into the centre of each cup. Top with enough batter to cover sauce.
4. Bake for 22 minutes or until golden brown. Cool slightly and remove from pan.
